Insalata di Riso

Every family has its own recipe for Insalata di Riso. The most common ingredients for a classic version are vegetables, cheeses, chicken ham, eggs and tuna. You can choose between mortadella, or wustel. For cheese, you can opt for a more delicate taste, with Fontina, or more sharp flavor with Emmental or Provola. In a large bowl, add the cheese, vegetables such as peas, gherkins, onions, bell peppers and tomatoes, which must be cut into small pieces. To this mixture, add canned tuna in oil and hard boiled eggs, which are sliced into small pieces. Add the *Arborio rice al dente only before serving. Season with extra virgin olive oil and salt. The salad is ready to be served.

*Ensure after the rice is cooked, it needs to be washed with cold water—first, to block the cooking; second, to make it cold.
